Mustard Tarragon Sauce
serves 4
Ingredients
- 1/3 C dry white wine
- 1 spring onion, thinly sliced
- 1/4 t pepper
- 3 T Dijon mustard
- 1 C evaporated milk or heavy cream
- 2 T fresh tarragon, minced
Instructions
- Simmer and reduce the wine, onion and pepper to 2 or 3 T of liquid.
- Stir the mustard and cream together in a separate bowl and pour the mixture slowly into the reduced wine.
- Add the tarragon, season to taste, and simmer 5 minutes.
